Cornbread Cowboy Casserole

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. In a skillet over medium heat, cook ground beef with onion until browned. Drain excess grease.

  3. Add garlic, beans, corn, diced tomatoes with chilies, chili powder, cumin, salt, and pepper. Stir and simmer 5 minutes.

  4. Spread beef mixture evenly in the prepared baking dish.

  5. Sprinkle shredded cheese evenly over the beef layer.

  6. Prepare cornbread batter according to package directions.

  7. Pour cornbread batter evenly over the cheese layer.

  8. Bake uncovered for 35–40 minutes, until cornbread is golden and set.

  9. Let rest 5–10 minutes before serving.

Tips and Variations

  • Add jalapeños for extra heat.

  • Use ground turkey instead of beef.

  • Serve with sour cream or salsa on top.
