Boil or steam the chicken breast in salted water (with optional seasoning).
Peel and chunk the carrots, and boil or steam them until soft.
In a blender or food processor, combine the chicken, carrots, cream cheese, mayonnaise (optional), garlic (if using), and a drizzle of olive oil or lemon juice.
Blend until smooth and spreadable.
Season with salt and pepper to taste.
This spread is especially delicious served cold—perfect with baguette, toast, pita bread, or crackers.
Tip: You can stir in herbs like chives or parsley for added freshness.
